Terry's Spicy Pasta

2 cups whole wheat penne pasta (or any other shape)
2 1/2 c broccoli florets
2 links Jennie-o hot Italian Sausage
3 tsp olive oil
1 lb boneless skinless chicken breast cut into bite size pieces
1 red bell pepper sliced very thin
1 yellow bell pepper sliced very thin
1 red onion sliced very thin
1 package of sliced mushrooms
2 ounces of prosciutto thinly sliced
3-4 cloves of garlic minced
1/4 tea crushed red pepper flakes
3-4 chopped pepperocini
1/4 c to 1/2 c of chicken broth.(Usually, the veggies create enough juice to keep everything simmering, but if it gets a little dry, i add some chicken broth)

1. Spray a large nonstick skillet with cooking spray. Heat and sautee the sausage and chicken. Remove from skillet.
2. Heat 3 tsp of oil to skillet and satuee the onions, red and yellow peppers and garlic. Add sausage and chicken. Add mushrooms, prosciutto, pepperocini and simmer. Add pepper flakes at the last few minutes (2-4 minutes) of cooking.

Boil the pasta while the sausage and chicken mixture is simmering,(before the pepper flakes) In the last 2 to 4 minutes of the pasta boiling, add the broccoli to cook.

Drain the pasta/broccoli and top with the chicken mixture, using a little of the juice. You can top with grated cheese (extra point)

This dish is on the spicy side. You can always tone it down by using sweet sausage and cutting back on or skipping pepperocini and/or red pepper flakes

Makes 4 servings @ 8 Points each or CORE + 1 Point each
